Ingredients

  • 1 cup coconut or almond milk
  • 3 tablespoons chia seeds
  • 1 tablespoon agave nectar
  • 1/2 tablespoon cracked flax
  • 1/2 tablespoon cracked hemp seeds
  • 1 teaspoon pure vanilla extract
  • Blueberries, pomegranate seeds or other fresh fruit or berries
  • Granola, raw oats, nuts or honey, for garnish

Instructions

  1. Combine the coconut milk, chia seeds, agave nectar, flaxseeds, hemp seeds and vanilla in a medium bowl, and let sit for 10 minutes, whisking every couple of minutes. The mixture will start to set like gelatin. Place some fruit in a parfait glass, add the milk mixture and let sit in the refrigerator overnight. Top with granola, raw oats, nuts or honey.
