Crunchy Fennel and Green Apple Salad

Ingredients

  • 2 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 2 teaspoons chopped fresh tarragon
  • 1 teaspoon country-style Dijon mustard
  • 1/2 teaspoon salt
  • 1 Granny Smith apple, thinly sliced
  • 1 fennel bulb, trimmed and thinly sliced
  • 1 bunch watercress, tough stems removed

Instructions

  1. Whisk together the orange juice, lemon juice, olive oil, tarragon, mustard and salt in a large bowl. Add the apple, fennel and watercress and toss until well mixed.
