Coconut/Flan Cake
Ingredients
- 1 (14 ounce) can sweetened condensed milk
- 1 (12 fluid ounce) can evaporated milk
- 1 cup white sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup shortening (such as Crisco®)
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/2 teaspoon ground ginger
- 2 cups all-purpose flour
- 1 cup finely grated unsweetened coconut flakes

Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Beat condensed milk, evaporated milk, white sugar, eggs, and vanilla extract together in a bowl until smooth. Add shortening, baking soda, cinnamon, salt, and ginger; beat until smooth. Stir flour and coconut into milk mixture until batter is smooth.
- Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 40 minutes.
