Coconut Oil Avocado-Banana Bread

Ingredients

  • Carlini Canola Cooking Spray
  • 3 bananas
  • 1 avocado
  • ¼ cup SimplyNature Organic Coconut Oil
  • ¾ cup Baker's Corner Granulated Sugar
  • 1 Goldhen Large Egg
  • 1 teaspoon Stonemill Pure Vanilla
  • 1½ cups Baker's Corner All Purpose Flour
  • 1 teaspoon Baker's Corner Baking Powder
  • 1 teaspoon Baker's Corner Baking Soda

Instructions

  1. Preheat oven to 350°. Coat an 8-inch loaf pan with cooking spray.
  2. In a medium bowl, mash the bananas and avocado.
  3. In a separate bowl, combine the coconut oil and sugar. Add the egg and vanilla, mixing until thoroughly combined. In a separate bowl, combine the flour, baking powder and baking soda. Add to the egg mixture, stirring until almost fully combined. Add the banana/avocado mixture. Stir until everything is fully incorporated. Pour into prepared pan.
  4. Bake for 1 hour. Allow to cool before slicing.
