Chicken and Pasta

Ingredients

  • 1 teaspoon extra-virgin olive oil
  • 1 clove garlic, crushed
  • 1 teaspoon crushed red pepper flakes
  • 1/2 boneless skinless chicken breast, cut into bite-size pieces
  • 1 cup canned stewed tomatoes
  • 2 cups whole-wheat pasta, cooked
  • 1/4 cup roughly chopped fresh basil leaves
  • 1 tablespoon grated Parmesan

Instructions

  1. Heat oil in a small wok or saute pan over medium heat. When oil is hot, add garlic and saute until translucent. Stir in red pepper flakes and saute for 1 minute. Add chicken and tomatoes and bring to a simmer; simmer for 4 minutes. Add pasta and toss to combine with sauce. Remove from heat and stir in basil. Divide among 2 plates, sprinkle with Parmesan, and serve.
