Butterscotch Pudding Doughnut Filling

Ingredients

  • 2 cups half-and-half
  • 1/2 cup packed dark brown sugar
  • 3 tablespoons cornstarch
  • Pinch salt
  • 2 large egg yolks
  • 1 tablespoon butter
  • 2 teaspoons vanilla

Instructions

  1. Whisk together the half-and-half, brown sugar, cornstarch, salt and egg yolks in a medium saucepan. Heat, stirring, until thick, about 2 minutes. Remove from the heat and stir in the butter and vanilla. Let cool. Store covered.
