Braised Shrimp
Ingredients
- 2 tablespoons canola oil
- 1 onion, diced
- 4 cloves garlic, crushed
- 1 green bell pepper, diced
- 4 ounces Canadian bacon, diced
- 1 large tomato, chopped
- 1 (15-ounce) can crushed tomatoes
- 1 tablespoon chopped fresh cilantro leaves
- 1 tablespoon chopped fresh oregano leaves
- 2 lemons, juiced
- 12 jumbo shrimp, peeled and de-veined

Instructions
- In a 12-inch nonstick saute pan, heat canola oil over medium heat. Add onion, garlic, and bell pepper and saute until crisp-tender. Add Canadian bacon, tomato, canned tomatoes, cilantro, oregano, and lemon juice and bring just to a simmer.
- Add shrimp and cook for 5 minutes, or until the shrimp is just cooked through. Serve warm with toothpicks.
