Black-Eyed Pea and Ham Salad
Ingredients
- 1 (15-ounce) can black-eyed peas, rinsed and drained
- 1 cup chopped chopped cooked ham (5 ounces)
- 1 celery rib, chopped
- 1/2 cup chopped red onion
- 1 small garlic clove, chopped
- 1 teaspoon finely chopped fresh jalapeño
- 2 1/2 tablespoons red-wine vinegar
- 2 tablespoons vegetable oil
- 1/4 cup chopped flat-leaf parsley
