Black Bean Tuna Salad

Ingredients

  • 1 (8 ounce) package elbow macaroni
  • 1/2 (15 ounce) can black beans, rinsed and drained
  • 1 (5 ounce) can tuna, drained and flaked
  • 1/2 cup mayonnaise
  • 3 green onions, sliced
  • 2 tablespoons bacon bits
  • 1/2 lemon, juiced
  • ground black pepper to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain. Rinse macaroni with cold water until cooled completely; drain and transfer to a large bowl.
  2. Mix black beans, tuna, mayonnaise, green onions, bacon bits, lemon juice, and black pepper with the macaroni. Cover the bowl with plastic wrap and refrigerate until chilled.
