Balela (Chickpea and Black Bean Salad)

Ingredients

  • 1 (15 ounce) can garbanzo beans (chickpeas), drained
  • 1 (15 ounce) can black beans, drained
  • 2 ripe tomatoes, chopped
  • 1/2 onion, chopped
  • 1/2 cup chopped fresh flat-leaf parsley
  • 3 tablespoons extra-virgin olive oil
  • 1 lemon, juiced
  • 1 clove garlic, minced
  • 1 pinch salt and fresh coarsely ground black pepper to taste (optional)

Instructions

  1. Combine garbanzo beans, black beans, tomatoes, onion, parsley, olive oil, lemon juice, garlic, salt, and pepper together in a bowl. Allow to sit for flavors to blend, 15 to 30 minutes.
