Bagel Bread Salad

Ingredients

  • Leftover bagels, cubed
  • 3/4 cup cubed cucumbers
  • 1/2 cup sliced red onion
  • 1/2 cup extra-virgin olive oil
  • 2 tablespoons red-wine vinegar
  • 10 fresh basil leaves, shredded
  • 2 large tomatoes, cut julienne

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Toast the leftover bagels on a cookie tray in the oven until crispy, 5 to 6 minutes. Toss the bagels, cucumbers, onions, olive oil, vinegar, basil and tomatoes together in a large salad bowl.
