Bagel Bread Salad
Ingredients
- Leftover bagels, cubed
- 3/4 cup cubed cucumbers
- 1/2 cup sliced red onion
- 1/2 cup extra-virgin olive oil
- 2 tablespoons red-wine vinegar
- 10 fresh basil leaves, shredded
- 2 large tomatoes, cut julienne

Instructions
- Preheat the oven to 400 degrees F.
- Toast the leftover bagels on a cookie tray in the oven until crispy, 5 to 6 minutes. Toss the bagels, cucumbers, onions, olive oil, vinegar, basil and tomatoes together in a large salad bowl.
