Baby Eels in Garlic Sauce

Ingredients

  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 10 ounces baby eels, cleaned
  • 1/2 cup white wine
  • Salt and pepper
  • Crushed dried chile pepper flakes

Instructions

  1. Heat oil in saute pan. Add minced garlic and baby eels and saute until cooked through. Add white wine, season with salt, pepper, and crushed red pepper, and simmer until the meat of the eels has turned opaque. Serve in a casserole bowl or other wide, flat bowl.
