Baby Artichoke Salad
Ingredients
- 1 pound baby artichokes, cleaned, trimmed and quartered
- 1 head endive, julienned
- 1 head radicchio, shredded thinly
- 1/2 cup fresh lemon juice
- 1/2 cup olive oil
- Salt and freshly ground pepper
