Avocado Pesto Toast
Ingredients
- 1/2 cup walnuts
- 1/4 cup olive oil
- 1 1/2 tablespoons freshly squeezed lemon juice
- 4 cloves garlic
- 2 ripe avocados, pitted and peeled
- 1 large bunch fresh basil leaves (about 3 ounces)
- Salt and freshly ground black pepper
- 6 pieces whole-grain toast

Instructions
- In a food processor, pulse together the walnuts, olive oil, lemon juice, garlic, avocados and basil until smooth. Add salt and pepper to taste. Spread onto each piece of toast. Serve immediately.
